CERTIFICATION PROCESS

The process can take between 10 and 28 days depending on the demand. The steps to follow are:

    Self-evaluation

    Download the ‘Format 1 Self-evaluation’. In the format you will find the requirements to postulate for the "Authentic Peruvian Cuisine" certification.

    Registration and application

    Do the self-evaluation and click on ‘inscription’, fill your restaurant data and attach the requested documentation. The registration generates a registration number and, in addition, you will receive a confirmation of your registration.

    Evaluation of the documents registered

    If you missed any document or requirement for the application, you will receive an e-mail indicating how to overcome the observations, before starting the application process.
    Once the registration has been made and according to all the requirements in ‘Format 2 Restaurant categorization’or in ‘Format 3 Other gastronomic ventures categorization’, within a maximum period of 10 labor days you will receive, via e-mail, a file number with the instructions to schedule the visit and technical evaluation.

    Programming an appointment and technical evaluation

    The technical evaluation of your restaurant will be made according to the programming in the same region. The dates will be communicated with anticipation.
    The restaurants and other gastronomic ventures will be evaluated according to the respective formats and the technical sheets.

    Final report and results

    After the visit, the evaluator will have two days to prepare a report on the dishes, techniques and supplies used in your restaurant.
    The official result of the evaluation will arrive by email and is unappealable.

    Delivery of certification:

    After fulfilling all the requirements and approving the technical evaluation, you will obtain:

    • For restaurants: "Authentic Peruvian Cuisine" certification and plate.

      According to the score, it is defined if it belongs to the Gold, Silver or Bronze category. The recognition is validated by USIL and 'Marca Perú'.

    • For other gastronomic ventures: "Authentic Peruvian Cuisine" certification and self-adhesive.

CERTIFICATION CATEGORIES

To obtain the Certificate "Authentic Peruvian Cuisine", we will be consider gastronomic ventures of various categories, which approve and comply with the requirements of use of Peruvian ingredients and techniques.

Identify your type of gastronomic entrepreneurship: restaurant, family restaurant, first category restaurant and others.

Download and complete the ‘Format 2 Restaurant categorization’ for restaurants or ‘Format 3 Other gastronomic ventures categorization’ according to the entrepreneurship. The score determines the obtaining of the certification and / or plate.

For restaurants, the plate distinguish three categories, depending on the score obtained:

medalla de oro

Gold category

A score of 49 to 50 points is required.

medalla de plata

Silver category

A score of 47 to 48 points is required.

medalla de bronce

Bronze category

A score of 45 to 46 points is required.

IMPORTANT: This certification does not endorse or validate quality of the service. The certification is based on the use of ingredients, techniques and typical Peruvian preparations.
